What to add to your trolley:

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1 cup fresh Sweet Corn Kernels (lightly steamed or blanched)
  • ½ Green Pepper, finely diced
  • ½ Red Onion, finely sliced
  • ½ cup cooked Bacon bits (vegetarian version)
  • ½ cup grated Cheese (cheddar, feta, or mozzarella — your choice!)
  • ¼ cup roasted Seeds or Nuts (pumpkin, sunflower, or almonds)
  • ½ cup Cherry Tomatoes, halved (optional)

Dressing:

  • ¾ cup Cottage cheese or Greek yogurt
  • 2 tbsp homemade Mayonnaise (Cyrus Recipe)
  • 1 tbsp Raw Honey
  • 1 tsp Dijon Mustard
  • 1 tsp lemon juice or Apple Cider Vinegar/fresh Lemon juice
  • Salt and Black Pepper to taste

How to Prepare the Deliciousness:

1.  Prepare the Vegetables:

Blanch broccoli, cauliflower, and sweet corn for 2 – 3 minutes until tender-crisp. Drain immediately and rinse with cold water to keep the colours bright.

2. Make the Dressing:

In a small bowl, whisk together cottage cheese, mayonnaise, honey, mustard, lemon juice, salt, and pepper until smooth.

3.  Assemble the Salad:

In a large bowl, combine broccoli, cauliflower, corn, green pepper, red onion, bacon bits, cheese, and seeds/nuts. Pour over the dressing and toss gently to coat evenly.

4. Chill & Serve:

Refrigerate for 30–60 minutes before serving for maximum flavour. Garnish with extra cheese or a sprinkle of seeds.
