1. Prepare the Vegetables:
Blanch broccoli, cauliflower, and sweet corn for 2 – 3 minutes until tender-crisp. Drain immediately and rinse with cold water to keep the colours bright.
2. Make the Dressing:
In a small bowl, whisk together cottage cheese, mayonnaise, honey, mustard, lemon juice, salt, and pepper until smooth.
3. Assemble the Salad:
In a large bowl, combine broccoli, cauliflower, corn, green pepper, red onion, bacon bits, cheese, and seeds/nuts. Pour over the dressing and toss gently to coat evenly.
4. Chill & Serve:
Refrigerate for 30–60 minutes before serving for maximum flavour. Garnish with extra cheese or a sprinkle of seeds.
