What to add to your trolley:

  • 3 x 500g Soup mix 
  • 2 medium Onions, diced 
  • 5 cloves Garlic, minced 
  • 3 liters Vegetable or Chicken broth 
  • 1½ teaspoons dried Thyme/mixed Herbs 
  • 1 cup Cream or Coconut Cream (optional for creamy version) 
  • Salt & Pepper to taste 
  • Fresh Parsley for garnish (optional)


How to prepare the deliciousness:

1. Sauté the Aromatics:

In a large stockpot, heat 2 - 3 tablespoons olive oil or butter over medium heat. Sauté onions and garlic until soft and fragrant (about 5 minutes).

2. Cook the Veggies:

Add the 3 packets of soup mix to the pot. Stir and sauté for 5 - 7 minutes to bring out flavour.

3. Add Broth and Simmer:

Pour in the 3 liters broth. Add herbs. Bring to a boil, then lower the heat and simmer gently for 25 - 30 minutes, until all veggies are tender.

4. Make it Creamy (Optional):

Stir in 1 cup cream or coconut cream and simmer for another 5 minutes.

5. Season, Serve and Store:

Season generously with salt and pepper. Garnish with chopped parsley if desired. This recipe will give you 4,5 - 5 liters of soup. It freezes well for up to 3 months.

Serve hot with crusty bread or a sprinkle of grated cheese on top.
