What to add to your trolley:

  • 4 large green peppers, halved and seeded 
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice, quinoa or couscous 
  • 250g lean ground beef or ostrich mince 
  • 1 cup chopped tomatoes or passata 
  • ½ tsp dried oregano or thyme
  • Salt & pepper to taste
  • 1 cup grated mozzarella or white cheddar 
  • Optional: corn, black beans, chopped spinach or herbs

How to prepare the deliciousness:

1. Preheat oven:

 Preheat oven to 180°C. Lightly oil a baking dish.

2. Sauté onions:

Heat olive oil in a pan. Sauté onion and garlic until soft. Add mince and cook through.

3. Combine:

Stir in tomatoes (or Passata), herbs, rice (or grain), salt, and pepper. Simmer for 5 minutes. Spoon filling into the pepper halves. Place in the baking dish.

4. Bake:

Sprinkle with grated cheese. Cover with foil and bake for 25–30 mins. Uncover and bake another 10 mins until peppers are tender and cheese is golden.


For a vegetarian twist, skip the mince and use lentils or chickpeas. Add herbs and chopped figs for extra flair!
