What to add to your trolley:

  • 250g Bacon, chopped
  • 1 tbsp Olive oil or Tallow
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 4 cups fresh Sweetcorn kernels (from about 4 cobs)
  • 2 medium Potatoes, peeled and diced
  • 4 cups Chicken or Vegetable stock
  • 1 cup Milk or Cream (optional for richness)
  • Salt & Black Pepper, to taste
  • Fresh Thyme or Parsley, for garnish

How to prepare the deliciousness:

1. Cook the bacon:

In a large pot, heat the olive oil and fry the chopped bacon until crispy. Remove half the bacon and set aside for garnish.

2. Sauté Aromatics :

Add chopped onion and garlic to the pot with the remaining bacon. Cook until soft and fragrant (about 3–4 minutes).

3. Build the Soup:

Add sweetcorn and diced potatoes to the pot. Pour in the stock and bring to a boil. Lower heat and simmer for 15–20 minutes, until potatoes are tender.

4. Blend:

For a creamy texture, blend half the soup using a stick blender, or transfer part to a blender and return it to the pot.

5. Finish and Serve:

Stir in milk or cream, season with salt and pepper, and heat gently until warmed through. Ladle into bowls, top with crispy bacon bits and fresh herbs. Enjoy with crusty bread!
