What to add to your trolley:

  • 2 medium Brinjals, sliced into 1 cm thick rounds
  • 2 tbsp Olive oil
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • ½ cup Feta cheese, crumbled
  • ¼ cup black Olives, sliced
  • 1 tsp Raw honey (optional, for balance)
  • 1 tsp Balsamic vinegar or lemon juice
  • 1 tbsp fresh Herbs (basil or parsley), chopped

How to Prepare the Deliciousness:

1. Prepare the Brinjals:

Preheat oven to 200°C.
Arrange brinjal slices on a baking tray, brush both sides lightly with olive oil, and season with salt and pepper.

2.  Roast:

Bake for 25–30 minutes, flipping halfway, until golden and soft.

3. Make the topping:

In a small bowl, mix cherry tomatoes, olives, feta, and herbs. Drizzle with olive oil, honey (optional), and balsamic vinegar or lemon juice. Toss gently.

4. Assemble:

Lay the roasted brinjal slices on a platter. Spoon the tomato-feta-olive mix over the top.

5. Serve:

Garnish with extra herbs and a final drizzle of Extra Virgin Olive Oil.
Serve warm or at room temperature with sourdough bread or grilled chicken.
